Triple Protein. Beef and Black Bean Stew with Herbs and Walnuts.

I love to create new dishes, and this one in particular, was inspired by my love for herbs and nuts. And it has a protein from meat, beans and nuts. That will give you a full spectrum of all required amino acids.  Great dish after a workout.

The aroma of this dish is simply incredible .

Ingredients:

Beef steak- 1 kg., cut in medium size cubes (3*3cm)

Beans- 2 cups, soaked overnight and boiled, till soft.

Onion- 2 medium sized, chopped.

Tomatoes- 6-8 medium sized, peeled and chopped.

Walnuts- 1/3 cup, roughly crushed.

Coriander- 1 bunch, chopped with stems.

Basil, Mint, Parsley, Dill-  1 bunch each, leaves only, chopped.

Garlic- 5 cloves, roughly chopped.

Red chilli- 1 large, roughly chopped.

Smoked paprika- 2 table spoons.

Salt, pepper.

Directions:

Heat an oil in a pan add meat and cook till browned in batches, set aside.

To the same pan add onions and cook till softened and browned in places, add tomatoes and cook on a medium heat till softened.

Stir in paprika, cook for 30 seconds.

Prepare a large pot, add meat, followed by tomato/onion mixture, reduce the heat to a low and cook for 45 minutes, covered, stir occasionally.

In a blender/processor mix all herbs (reserve some for garnish) with garlic and chilli, set aside.

 

Wash the beans in cold water and drain.

To the meat mixture (after 45 minutes), add beans and nuts, cover and cook for a further 15 minutes.

Add salt, pepper, and stir in herbs mixture. Cook for 30 seconds and take the pot of the heat.
