Insanely delicious, i came up with these today. Finger licking food, big time.
Rack of Lamb.
Coca Cola- 2 cups, for the soak and 1/4 cup for the sauce.
Garlic- 3 cloves, minced.
Soy sauce- 1 teaspoon.
Sriracha- 2 teaspoons.
Barbecue sauce- 1 tablespoon.
Sugar- 2 tablespoons.
Honey- 1 tablespoon.
Black pepper- 1 teaspoon.
Salt- 1/2 teaspoon.
Olive oil- 1 teaspoon.
Cut the rack of lamb to individual cutlets. In a container, lay down the cutlets and pour enough Coca Cola, to soak them in. Place a plate on top, as the cutlets tend to float. Let it soak for an hour.
Mix up 1/4 cup of Coca Cola, 1 teaspoon of soy sauce, 2 teaspoons of Sriracha, 1 tablespoon of honey, 1 teaspoon of salt, 1 teaspoon of black pepper, 2 tablespoons of sugar, 1 tablespoon of Barbecue sauce, 1 teaspoon of olive oil and minced garlic.
Drain the cutlets and dry them with a paper towel.
Rub the prepared mixture onto each cutlet. Reserve the left over liquid.
Heat an oil in pan and add your cutlets, and cook for a minute on each side. Add left over mixture , reduce the heat to a medium ,cover and cook for 20 minutes, turning every 5 minuets.Then take the lid off and cook uncovered, turning the cutlets frequently till all the sauce is nicely coated on the lamb. Watch closely towards the end of cooking, to prevent meat from burning.
