Duck breast with skin on- as many as you want to cook.
Salt, paprika to taste.
Cut the duck breasts, in a criss cross, season with salt and paprika, set aside for 30 minutes.
Heat an oven to 200C.
Put a skillet on a heat, and immediately add duck breasts, skin dow, do not wait for a skillet to be hot.
Cook on a skin down for 10 minutes, turn over and cook for a further 3 minutes.
Place the duck breasts on a parchment lined baking tray and place into the oven for 30 minutes.
When ready, let the breasts sit for 5-6 minutes, and then cut each into slices.
Serve on a bed of mashed potatoes.
