I highly recommend/insist that you make your own tortillas, you can freeze some and make more tasty dishes later. The difference is incomparable, they also great reheated next day. I love mine with a sour cream and guacamole (takes 5 minuets to make), as all the flavours mix really well.

Avocado- 3 ripe pieces.
Tomato- 3 medium sized, chopped.
Onion- 1/2 chopped.
Fresh coriander- 1 bunch, leaves only, chopped.
Red chilli- 2 deseeded and chopped.
Lemon or lime juice- 1 tablespoon.
Olive oil- 1 tablespoon.
Peel avocado, mash roughly with a fork and pour lemon juice over it, to prevent darkening.
Add to avocado, the rest of ingredients, stir and season to taste.
Tortillas-this recipe is for 4 quesadillas and you will need respectively 8 tortillas.
Chicken breast- 2 pieces, cut in strips.
Yellow capsicum- 2 cut in strips.
Onion- 1 large, cut in half rings.
Cheese- i am using cheddar-200g + (depending on your taste) grated.
Fajita spice mix or any other Mexican spice mix.
Butter -50 g
Mix chicken strips with your spices and set side for few minutes.
Heat an oil in a pan and fry chicken till nice and cooked.Set aside.
Rinse and dry the pan, heat an oil and fry onions and capsicum till slightly golden, do not overcook, should take less than 5 minutes.
Add chicken, mix all together for 1 minute, set aside.
Heat butter 1/4 in a pan, lay down one tortilla, cover it with chicken mixture and put a layer of cheese on top (make sure cheese is distributed evenly as it will help the tortilla on top stick properly).Put second tortilla on top and press slightly with spatula or hands.
Cook until the bottom tortilla is nice and crispy, than carefully turn it over, you can turn it with a spatula or put a plate over, flip and slide tortilla to a pan. If you are flipping be aware of dripping oil. Cook on the other side till nice and crispy as well. Now you will definitely need to flip it with a plate.
Repeat the process with the rest of quesadillas.
I like to cut them in 4 slices on a cake stand using a bread knife.
Enjoy with guacamole and sour cream.
