It’s a great holiday dish, and flavours of duck and apples, infused in to each other, make this dish very memorable. You can also add some dry fruits, if you like, but i will stick to green apples only.
Duck- 1 whole- appr. 2 kg/4.4 pounds
Apples- green 5-6 , cored and cut in wedges.
Salt – 1 tablespoon.
Black pepper- 1 tablespoon.
Honey- 1/2 cup.
Garlic- 3 cloves, grated/mashed.
Oil- 1-2 tablespoons.
Pre-heat the oven to 220C/428F. Line a baking tray with foil.
Wash, and dry duck with a paper towel. Mix salt , pepper and oil in a bawl, and rub the duck with it inside and out.
Then, mix honey with garlic and rub the duck inside and out with a mixture, and let it sit for 30-45 minuets.
Stuff the cavity with green apples , as much as you can fit , then either stitch it or use tooth picks to close it.
Cover with another foil sheet and place the duck in the oven for an hour and a half. Every half an hour take it out and baste it with juices, that leaked on a tray.
After 1 hour reduce the heat to 160C/320F ,remove the top foil and bottom foil, scatter the rest of apples around the duck and cook for another 30 minuets.
